Souvlakis

4 Butcher’s Own Ready-to-cook Maui Chicken Souvlakis

4 Compliments Pita Breads

3 Compliments Mini Seedless Cucumbers, finely julienned

1 mango, finely julienned

½ small red onion,
Herb yogurt sauce
-
250 mL (1 cup) plain Greek yogurt
-
10 leaves fresh mint
-
60 mL (¼ cup) chopped fresh basil
-
2 mL (½ tsp.) cumin
-
½ lemon,

To taste, salt and pepper

Directions
- For the herb yogurt sauce, mix together all the ingredients and season with salt and pepper to taste. Set aside.
- Grill souvlaki according to package directions on barbecue heated to medium-high. At the same time, heat pitas on upper grill or on unheated side of barbecue.
- Place a quarter of the yogurt sauce in centre of each heated pita. Top with the meat from one souvlaki brochette, a few juliennes of cucumber and mango, and some sliced onion. Roll up the pitas and wrap bottom half with parchment paper or foil wrap.
