Maple-glazed rack of pork

Ingredients

  1. 250 mL (1 cup) maple syrup
  2. 160 mL (2/3 cup) Store-bough onion confit
  3. 30 mL (2 tbsp.) olive oil
  4. 30 mL (2 tbsp.) butter
  5. 1 6- to 8-rib rack of pork
  6. Salt and
  7. freshly ground pepper, to taste
  8. 125 mL (1/2 cup) white wine
  9. 250 mL (1 cup) chicken bouillon

Directions

  1. Preheat oven to 150°C (300°F).
  2. Stir together maple syrup and confit in a small saucepan. Bring to a boil and reduce by half.
  3. In a large ovenproof skillet, heat oil and butter and sear rack of pork on all sides. Season generously. Brush pork with syrup; repeat several times during cooking. Add wine and chicken bouillon to skillet.
  4. Place in oven for 1 hour. Remove from oven and let pork sit, tented with aluminum foil, for 15 minutes before carving.
  5. Serve pork pink, sprinkled with cooking juices and accompanied by a selection of vegetables.
