Ingredients

1 Young Turkey 8.5 to 11 lb (4 to 5 kg), thawed according to package directions

1 tbsp (15 mL) chili powder

¼ tsp (1 mL) each salt and pepper (optional)

2 apples, chopped

1 bulb garlic, halved
-
1 onion, chopped
-
1 bunch fresh sage, coarsely chopped

1 pkg. (500 g) Maple Bacon
-
1 cup (250 mL) 100% Pure Maple Syrup

Directions

Preheat oven to 500°F (260°C).

Season turkey evenly, inside and out, with chili powder and salt and pepper (if using). Place turkey in a roasting pan.

Stuff the cavity loosely with apples, garlic, onion and sage. Lay bacon strips over the entire turkey: breasts, legs and cavity.

Transfer to oven and reduce heat to 350°F (180°C). Roast turkey for about 3 hours or until an instant-read thermometer registers 180°F (82 °C) when inserted into the inner thigh.

During the last 30 minutes of roasting, brush the turkey and bacon with the maple syrup several times.
