Maple-glazed salmon

Ingredients

  1. 15 mL (1 tbsp.) olive oil
  2. 1 shallot, chopped
  3. 250 mL (1 cup) maple syrup
  4. 250 mL (1 cup) amber beer
  5. 1 fresh salmon fillet, about 675 g (1½ lb.)
  6. 1 bunch asparagus, trimmed
  7. 500 ml (2 cups) cooked basmati rice (optional)

Directions

  1. Preheat oven to 180°C (350°F). Heat olive oil in a saucepan over medium-high heat and sauté shallot a few minutes without browning it.

  2. Add maple syrup and beer and bring to a boil. Let simmer, allowing the liquid to reduce by half, about 15 minutes.

  3. Place salmon on a foil-lined baking sheet.

  4. Brush half the syrup over the salmon and place asparagus around it on the baking sheet.

  5. Bake for 15-18 minutes, brushing with remaining syrup at the midway point.

  6. Serve with white rice seasoned with dill.
