Mango-beef brochettes

Ingredients

  1. 450 g (1 lb.) lean ground beef
  2. 2 garlic cloves, finely chopped
  3. 125 mL (1/2 cup) unfrozen mango, diced into little cubes
  4. 75 mL (1/3 cup) finely chopped sundried tomatoes
  5. 1 egg, beaten
  6. 7 mL (1½ tsp.) Chipotle Tabasco sauce
  7. 4 wooden skewers, soaked in water for 1 hour
  8. 125 mL (1/2 cup) commercial barbecue sauce
  9. To taste, salt and pepper
  10. Fresh Attitude Creamy Salad, as a side dish

Directions

  1. Preheat oven broiler, setting rack about 20 cm (8 inches) below heat source.

  2. In a large bowl, combine ground beef, garlic, mango, sundried tomatoes, egg and 5 mL (1 tsp.) Tabasco sauce. Season with salt and pepper to taste.

  3. Dip hands into cold water and shape meat mixture into 8 rolls about 7 cm (3 inches) long, flattening slightly. Thread rolls onto each skewer, pressing so meat stays on.

  4. Place brochettes on a lightly oiled baking sheet. Broil for 10 to 12 minutes, or until meat is cooked and lightly browned. Turn brochettes several times as they cook.

  5. In a small bowl, stir together barbecue sauce and remaining Tabasco sauce. Serve brochettes on a bed of couscous with the barbecue dipping sauce and a green salad.

Variation : Shape meat into small meatballs, cook, and insert decorative toothpicks. Serve with barbecue sauce or commercial tzatziki sauce. Perfect for cocktail parties!
