Ingredients

1. 175 mL (¾ cup) grilled red peppers in oil, drained and diced
2. 2 ripe mangos, diced
3. ¼ to ½ red onion, thinly sliced
4. 10 mL (2 tsp.) fresh ginger, peeled and finely grated
5. 15 mL (1 tbsp.) finely chopped fresh coriander
6. 15 mL (1 tbsp.) finely chopped fresh mint
7. 15 mL (1 tbsp.) lime juice (about 1 lime)
8. To taste, ground pepper
