Ingredients

450 g (1 lb.) tartare-grade tilapia, diced

250 mL (1 cup) freshly squeezed lime juice, or enough to cover fish (about 10 limes)

1 clove of garlic, finely chopped

2.5 mL (½ tsp.) salt

1 small mango, diced

½ red pepper, diced

60 mL (¼ cup) diced red onion

60 mL (¼ cup) fresh coriander, finely chopped

2 limes, juiced

2.5 mL (½ tsp.) pink peppercorns, crushed with a mortar

Directions
- Place the tilapia, 250 mL (1 cup) lime juice, garlic, and salt in a glass bowl. Cover and refrigerate for 4 to 6 hours.
- Strain the liquid from the fish mixture. Transfer to a clean bowl.
- Add the mango, red pepper, onion, coriander, juice of 2 limes, and pink pepper. Mix gently and serve.
