Mahi-mahi Mango Brochettes

Ingredients

  1. 60 mL (1/4 cup) white wine
  2. 1 red bell pepper,
  3. 1 green bell pepper,
  4. 1 red onion, cut into pieces
  5. 2 mangos, peeled and cut into large chunks
  6. 4 mahi-mahi fillets cut into thick strips
  7. 45 mL (3 tablespoons) lime juice
  8. 45 mL (3 tablespoons) Compliments Authentico olive oil
  9. 30 mL (2 tablespoons) curry paste
  10. to taste pepper

Directions

  1. Place the mahi-mahi, mango, onion, and peppers in an oven dish.

  2. Combine the white wine, oil, lime juice, and curry paste in a small bowl. Season with pepper to taste and combine thoroughly.

  3. Pour the mixture over the mahi-mahi and other ingredients. Cover and marinate in the refrigerator for two hours.

  4. Preheat the oven to 200˚C (400˚F). Arrange the strips of mahi-mahi on skewers in alternation with the vegetables and mango chunks.

  5. Cook for 5 to 6 minutes, turning half-way through the cooking time.
