Mache, Asparagus, Pea, and Shallot Salad

Ingredients

Dressing

  1. 80 mL (1/3 cup) mayonnaise
  2. 15 mL (1 tbsp.) tamari
  3. 15 mL (1 tbsp.) white balsamic vinegar

Salad

  1. 1 bunch of green asparagus
  2. 15 mL (1 tbsp.) vegetable oil
  3. To taste salt and pepper
  4. 125 mL (1/2 cup) frozen peas
  5. 1 package (84 g) mache lettuce
  6. 2 shallots, finely chopped

Directions

  1. Mix all the dressing ingredients in a small bowl. Set aside in a cool location.
  2. Trim the asparagus by breaking off the coarse ends. In a pan, brown the asparagus in oil until tender, about 5 minutes. Salt and pepper and set aside.
  3. Meanwhile, cook the peas in boiling salted water as indicated on the packaging. Drain and set aside.
  4. Cut the asparagus into four sections of about 5 cm (2 in.) each.
  5. Place the mache in a serving bowl, distribute the asparagus, peas, and shallots, and drizzle with dressing.
