Ingredients

Skewers

  1. 2 cooked lobster tails, cut into 2–3 cm pieces
  2. 4 cubes (3 cm x 3 cm each) fresh watermelon, not too ripe
  3. 2 cubes (2 cm x 2 cm each) fresh mango, not too ripe
  4. 4 pearl onions (not the sweet ones)

Dressing

  1. white balsamic vinegar
  2. salt and pepper
  3. lemon juice
  4. 6 Thai basil leaves, finely chopped

Directions

  1. Preheat BBQ.
  2. Thread ingredients alternately onto the metal skewers.
  3. Pour a generous drizzle of white balsamic vinegar over the skewers and season with salt and pepper to taste.
  4. Grill over indirect heat.
  5. When ready to serve, drizzle with a little lemon juice and sprinkle with basil.
