Lobster and Pesto Pasta

Ingredients

  1. 15 mL (1 tbsp.) olive oil
  2. ½ small red onion
  3. 230 g (½ lb.) lobster meat (approximately two 1 lb. lobsters)
  4. 30 mL (2 tbsp.) Sensations by Compliments Pesto Rosso
  5. 60 mL (¹/³ cup) white wine
  6. 1 roasted red pepper, peeled and cut into strips
  7. 12 Kalamata olives, pitted and diced (optional)
  8. 300 g (²/³ lb.) fresh linguine Fresh Compliments Basil (optional)

Directions

  1. Bring water to a boil in a saucepan.
  2. Heat olive oil over medium heat in a skillet. Add onion and sauté until trans lucent.
  3. Add lobster meat and pesto and cook for 2 to 3 minutes.
  4. Add white wine, olives and red pepper, and cook for 3 to 4 minutes.
  5. Cook fresh pasta for 3 minutes or according to package directions.
  6. Drain pasta, combine with lobster sauce, and cook for 2 to 3 more minutes.
  7. Garnish with basil and serve.
