Linguine with chicken and rosso pesto

Ingredients

  1. 4 boneless chicken breasts, cut into strips
  2. 1 container (142 g) Sensations by Compliments Rosso Pesto
  3. ½ package (1 kg) fresh Compliments Linguine
  4. 15 mL (1 tbsp.) Compliments olive oil
  5. 1 container (280 g) Compliments Candi-to™ Tomatoes
  6. 2 zucchini, sliced
  7. To taste, Fresh shaved Parmesan,

Directions

  1. Bring water to a boil in a saucepan.
  2. Mix together the chicken strips and 30 mL (2 tbsp.) of rosso pesto in a bowl.
  3. Cook fresh pasta in the boiling water.
  4. Heat the oil in a skillet over medium-high heat, add the chicken and fry until cooked.
  5. Add the tomatoes and zucchini, and cook 2 or 3 minutes.
  6. Drain the pasta and toss with the remaining pesto. Incorporate the chicken, tomatoes, and zucchini.
  7. Garnish with shaved Parmesan and serve.
