- In a large pot of boiling water, cook the pasta according to package instructions.
- Add beans 4 minutes before the end of cooking. Reserve 125 mL (½ cup) of cooking water, drain pasta and beans and set aside.
- In the same pot, heat oil over medium-high heat. Lower heat to medium, add garlic and sauté without browning. Add tomatoes and continue cooking for 1 minute.
- Add the reserved pasta and beans. Season with salt and pepper to taste.
- Mix to coat well. Add cooking water as needed to separate pasta. Add cheese at the very end so it warms but doesn’t melt.
- Sprinkle with lemon zest and serve immediately.
Variation: Replace cheese by tinned tuna or salmon.
Tip: This pasta is delicious cold for the next day's lunch.
