Ingredients
Soup

10 mL (2 tsp.) Compliments Olive oil

1 onion, finely chopped

1.5 L (6 cups) sodium-reduced chicken broth

500 mL (2 cups) celery, diced

500 mL (2 cups) carrots, diced
-
375 mL (1½ cups) cauliflower, cut into small florets

1 can (796 mL/28 oz.) Compliments Diced Tomatoes

1 can (540 mL/19 oz.) Compliments Tomato Juice

1 can (540 mL/19 oz.) lentils, rinsed and drained
-
10 mL (2 tsp.) powdered cumin
-
125 mL (½ cup) fresh parsley, chopped
-
To taste, salt and pepper
-
To taste, fresh cilantro (garnish)
Coriander yogurt
-
175 mL (3/4 cup) plain yogurt
-
30 mL (2 tbsp.) chopped fresh parsley
-
30 mL (2 tbsp.) chopped fresh cilantro

Directions
- Heat oil in a large saucepan and brown onion for two minutes.
- Add chicken broth, vegetables, tomatoes and tomato juice. Cover and let simmer over medium-high heat for 25 minutes.
- Add lentils, cumin and parsley and season to taste. Continue cooking for 5 minutes.
- Combine coriander yogurt ingredients.
- When ready to serve, garnish soup with fresh coriander and a dash of coriander yogurt.
- Accompany with a Compliments Rustic Loaf.
