Ingredients

  1. 2 packs (170 g) lobster, thawed

butter

  1. 125 mL (½ cup) softened butter
  2. 1 clove garlic, minced
  3. 60 mL (¼ cup) fresh basil, chopped
  4. 30 mL (2 tbsp.) freshly chopped dill
  5. 45 mL (3 tbsp.) grated Parmesan cheese
  6. 3–5 mL (½–1 tsp.) freshly ground pepper
  7. To taste salt

Crisp

  1. 2–3 slices toasted bread, finely chopped
  2. 80 mL (⅓ cup) grated Parmesan cheese
  3. Optional lemon wedge

Directions

  1. Preheat oven to broil.
  2. Pat lobsters dry and cut them in half with a sharp knife. Place on a baking sheet. Set aside.
  3. Combine all butter ingredients in a bowl.
  4. In another bowl, mix dry bread and grated Parmesan cheese.
  5. Brush lobster meat with garlic butter and top with Parmesan crisp.
  6. Broil for 7–8 minutes or until cooked through and golden brown.
  7. Remove from oven.
  8. Serve immediately. with a lemon wedge.

  • Pay close attention while the lobster is cooking. It’s cooked when the meat is white. Avoid overcooking, as this can cause a chewy texture.
  • Serve with a green salad and a dry white wine.
