Le Baluchon Cheese Sauce

Ingredients

  1. 125 mL (1/2 cup) 35% cream
  2. To taste, salt and pepper
  3. 225 g (1/2 lb) Le Baluchon cheese (with rind)
  4. 60 mL (1/4 cup) white wine
  5. 15 mL (1 tablespoon) flour
  6. 15 mL (1 tablespoon) butter
  7. 375 mL (1 1/2 cups) sliced fresh mushrooms

Directions

  1. In a skillet, sauté mushrooms in the butter. Allow to cook for two minutes. Add flour and mix well.
  2. Incorporate wine and cheese. Finish with cream. Allow to simmer until desired consistency is reached; season to taste.
  3. Serve with veal or turkey cutlets and pasta.
