Lamb Curry Stir-fry

Ingredients

  1. Fresh chard (leaves and stalk), chopped
  2. curry paste
  3. Lamb fondue meat
  4. rice noodles
  5. Fresh mango, cubed

Directions

  1. Cook rice noodles according to package instructions. Set aside.
  2. Heat a little olive oil in a wok or large skillet. Add pork and brown.
  3. Add curry paste and mix in well. Incorporate chard and mango and continue cooking until tender.
  4. Season with salt and ground black pepper to taste.
  5. Serve on a bed of rice noodles.
