Lamb burgers with lime mayo from Josée di Stasio

Ingredients

Burgers

  1. 450 g (1 lb.) ground lamb, or half ground lamb and half ground bison
  2. To taste, Sriracha sauce or cayenne pepper
  3. 5 mL (1 tsp.) allspice
  4. 60 mL (¼ cup) water
  5. 80 mL (1/3 cup) chopped fresh cilantro
  6. 2 mL (½ tsp.) salt
  7. 45 mL (3 tbsp.) olive oil
  8. 4 English muffins, cut in half
  9. To taste, sliced ripe tomatoes

Fried onion

  1. 1 Spanish onion, cut into ½-cm (¼-in.) slices
  2. To taste, salt

Lime mayonnaise

  1. 250 mL (1 cup) mayonnaise
  2. 125 mL (½ cup) firm plain Greek yogurt
  3. 10 mL (2 tsp.) lime zest (about 2 limes)
  4. 15 mL (1 tbsp.) freshly squeezed lime juice (about 1 lime)
  5. 1 garlic clove or more to taste, crushed in a garlic press
  6. To taste, Sriracha sauce or cayenne pepper
  7. 1 mL (¼ tsp.) salt

Directions

Lime mayonnaise

  1. Mix together all ingredients in a small bowl. Taste and adjust seasoning, as needed. Refrigerate until ready to serve.

Fried onion

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and lightly oil it. Place onion slices on baking sheet and season with salt to taste.
  2. Bake in centre of oven for 40 minutes, or until onion is golden brown. Set aside.

Burgers

  1. In a large bowl, combine first 6 ingredients.
  2. Avoid pressing down on the mixture so the meat doesn’t harden.
  3. Cook about 15 mL (1 tbsp.) of the mixture to verify seasoning. Adjust if necessary.
  4. Lightly oil hands and form 4 patties 10 cm (4 in.) in diameter.
  5. Preheat the barbecue to medium-high and lightly oil the grill.
  6. Grill patties about 3 minutes per side, turning only once while they cook. The meat should be fully cooked.
  7. Grill English muffins about 1 minute per side. Spread them with lime mayonnaise and garnish with tomato slices and fried onion.

Tip:

  • Avoid turning meat too soon after it starts cooking so it won't stick to the barbecue grill.
  • Turn patties only once without pressing down on them while cooking, so they don't become hard.

No waste:

Use leftover fried onion in a pasta or legume salad, a sandwich, or a pasta dish.

Variation

You can also prepare these burgers using ground pork. In this case, omit the water and season more generously with salt. Grill for 8 minutes on the barbecue, about 4 minutes per side, until meat is well done.
