Ingredients
Roasted Onion

1 large yellow onion, cut into 12 wedges

2 tbsp (30 ml) olive oil
Arugula Pesto

1 cup (25 g) arugula

2 tbsp roasted pumpkin seeds

2 tbsp (30 ml) olive oil

2 tsp (10 ml) lemon juice

1 tsp garlic, chopped
Patties
-
1 lb (450 g) lean ground lamb
-
⅓ cup (30 g) panko breadcrumbs
-
1 tbsp ground sumac
-
1 egg
-
2 tbsp (30 ml) olive oil
Burgers

4 hamburger buns, toasted

½ cup (125 ml) sour cream
-
½ cup (15 g) arugula

Directions
Roasted Onion

With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

On the baking sheet, toss the onion wedges with the oil. Season with salt and pepper. Bake for 30 minutes or until the onion is tender and golden.
Arugula Pesto

Meanwhile, in a small food processor, purée all of the ingredients until fairly smooth. Season with salt and pepper. Set aside.
Patties

In a bowl, combine the ground lamb, breadcrumbs, sumac and egg. Season with salt and pepper. Using your hands, form the mixture into 4 patties.

In a large skillet over medium heat, cook the patties in the oil for 4 to 5 minutes on each side.
Burgers
- Cover the bun bottoms with the sour cream. Top with the patties, roast onions, arugula and pesto. Close with the bun tops.
