Ingredients

85 g breakfast sausages cut into slices

75 g grated cheddar cheese

1 sunny side up egg

8 cooked small potatoes, diced

1/8 medium onion, diced

1/8 red pepper, diced

1/8 green pepper, diced

1 tablespoon 15 ml olive oil

1 finely chopped clove garlic

2 pinches fresh or dried thyme, to taste

To taste salt and pepper

Directions
- Heat the oil on high in a large frying pan, add onions and potatoes, stir and cook for 3 minutes. Add peppers and garlic, stir and cook for another 2 minutes. Add thyme and salt and pepper.
- Transfer to a gratin dish or small cast-iron pan.
- Cook the sausages in the pan or on a plate until they are well browned.
- Add the sausages to the vegetable mixture, cover with cheese and broil.
- Place the fried egg on top and serve immediately.
