Individual Dried Fruit Bread Puddings

Ingredients

1 cup (250 mL) apple juice
1/3 cup (75 mL) sugar
3 eggs
¼ cup (60 mL) Compliments Dried Cranberries
½ cup (125 mL) Compliments Large Prunes
½ cup (125 mL) Compliments Dried Apricots
3 cups (750 mL) cubed day-old bread
¾ cup (175 mL) milk
1 tsp (5 mL) vanilla extract
¼ tsp (1 mL) salt
½ cup (125 mL) Compliments Sensations Peach with Ice Wine Jam

Directions

Preheat oven to 300°F (150°C). Lightly coat a 24-cup mini muffin tin with cooking spray.
Combine bread, apricots, prunes and cranberries in a large bowl. In a separate bowl, whisk the eggs with the sugar until pale yellow; whisk in apple juice, milk, vanilla and salt.
Pour over bread mixture; soak for 5 minutes.
Divide bread mixture between muffin cups. Bake for 20 minutes or until set. Cool slightly and garnish with peach ice wine jam.
