Indian Style Lentil Tacos

Serves 6-8

Ingredients

  1. 2 to 3 Small Persian cucumbers
  2. 1 Medium tomato
  3. 0.25 ml ½ tsp. Salt
  4. 60 ml 4 tbsp. Plain yogurt
  5. 2 Scallions
  6. 2 Limes
  7. 1 pouch (285 g) Tasty Bite Madras Lentils
  8. 1 pouch (250 g) Ben’s Original Bistro Express Basmati Rice
  9. 6-8 Small Naan Breads
  10. 30 ml 2 tbsp. Cilantro leaves (optional)

Directions

  1. Cut up cucumbers, tomatoes and mix with a pinch of salt.
  2. Slice scallions for garnish.
  3. Stir together yogurt, salt and the juice of half a lime.
  4. Heat rice and lentils in microwave as described on the packaging.
  5. Soften naan in microwave if needed. Add spoonful of rice to each naan then top with a spoonful of lentils.
  6. Add a dollop of yogurt and arrange on platter. Sprinkle with diced cucumbers and tomatoes then scallions (and cilantro if desired) and arrange together on platter with lime wedges.
