Ingredients
Pie crust

310 mL (1¼ cups) graham cracker crumbs

60 mL (¼ cup) melted unsalted butter or margarine
Filling

750 mL (3 cups) fresh mixed berries (raspberries, blackberries, blueberries, strawberries)

60 mL (¼ cup) icing sugar, or to taste

1 L (4 cups) vanilla ice cream

To taste, fresh mint leaves (optional)

Directions
- Preheat the oven to 180°C (350°F).
- Combine graham crumbs and butter in a bowl. Press mixture into the bottom of a 23-cm (9-inch) pie pan.
- Bake in the oven for 7 or 8 minutes, until crust is golden brown and crispy. Set aside at room temperature.
- In a large bowl, gently toss berries with icing sugar. Set aside at room temperature.
- Set ice cream at room temperature about 15 minutes, until soft enough to spread easily. Use a spoon to spread ice cream evenly over the pie crust. Place it in the freezer until firm, at least 1 hour.
- Top pie with a mountain of fruit and some mint leaves, if using.
