Fried Onions
- Preheat the oil in a deep fryer to 365°F (185°C). Line a baking sheet with a wire rack or paper towels. Preheat the oven to 200°F (95°C).
- Place the onion slices in a bowl. Add the vinegar and let marinate for 15 minutes, stirring a few times. Drain.
- Meanwhile, in another bowl, combine the flour and cream of tartar. Season with salt.
- Place the onion in the flour mixture, stirring to coat well.
- Fry half of the onion at a time for 2 to 3 minutes on each side or until nicely browned. Drain on the baking sheet. Season with salt. Keep warm in the oven. Repeat with the remaining onion.
Burgers
- With your hands, shape the meat into 4 patties. Place on a plate. Season with salt and pepper.
- In a non-stick skillet over high heat, cook the patties in the oil for 4 to 5 minutes on each side or until cooked through. Place a slice of cheese on each patty and continue to cook until the cheese starts to melt (see chef’s tip). Keep warm.
- In the same skillet, cook the shrimp with the barbecue sauce for 2 to 3 minutes or until the sauce is thick and syrupy, and the shrimp are cooked through (see chef’s tip).
- Cover the inside of the buns with mayoracha sauce. Place the watercress on the bun bottoms. Top with the patties, shrimp and fried onions. Drizzle with honey garlic sauce, to taste. Close with the bun tops. Delicious served with Budweiser beer.
Chef’s tip
The hamburger patties can also be cooked on a preheated grill, with the burners set to high, for 4 to 5 minutes on each side.
These shrimp with honey garlic sauce are very versatile. For example, they are delicious served with a steak or salad.
