Ingredients

  1. 30 mL (2 tbsp.) tricolour peppercorns
  2. 30 mL (2 tbsp.) fennel seeds
  3. 30 mL (2 tbsp.) coriander seeds
  4. 15 mL (1 tbsp.) mustard seeds
  5. 15 mL (1 tbsp.) cumin seeds
  6. 30 mL (2 tbsp.) onion powder
  7. 30 mL (2 tbsp.) garlic powder
  8. 15 mL (1 tbsp.) dried thyme leaves
  9. 15 mL (1 tbsp.) ground paprika
  10. 15 mL (1 tbsp.) crushed chilli pepper
  11. 15 mL (1 tbsp.) coarse salt

Directions

  1. In an unoiled skillet, brown the peppercorns, fennel, coriander, mustard, and cumin seeds.
  2. When you start to smell the seeds and hear them crackle, remove from heat and place in a mortar.
  3. Add remaining ingredients and crush.
