Ingredients

2 nests Blue Dragon Medium Egg Noodles

30ml 2 tablespoons Cooking oil

½ lb Pork tenderloin, sliced

10ml 2 tea spoons Blue Dragon Hoisin Sauce

10ml to 20ml 2 to 4 tea spoons Blue Dragon Red Curry Paste (depending on required heat)

15ml 1 tablespoon Soy sauce

½ Onion, diced
-
½ of each Green & yellow peppers, sliced

1 Red chili, sliced

15ml 1 tablespoon Chopped coriander

Directions
- Cook the noodles as per instructions on package, set aside. (3 minutes)
- Heat 1 tbsp of oil in pan over a medium high heat, stir fry the pork until cooked, add Hoisin sauce and mix through, stir fry until the sauce is absorbed, set aside. (10 mins)
- In a bowl mix the red curry paste and soy sauce and set aside.
- Heat 1 tbsp of oil in pan over a medium high heat, add the onions, stir-fry for approximately 2 minutes or until tender, then add in the peppers and stir-fry for a further 30 seconds, add in the red curry mix and stir fry for a further 30 seconds until fragrant, add in the noodles, pork and chilies and stir fry until hot. (5 mins)
- Serve and garnish with the coriander.
