Herbed Arctic Char Fillets

Ingredients

  1. 4 Arctic char fillets (about 200 g each)
  2. 1 shallot chopped
  3. 15 mL (1 tbsp.) chopped fresh thyme
  4. 30 mL (2 tbsp.) chopped fresh parsley
  5. To taste, salt and pepper
  6. 125 mL (1/2 cup) plain yogurt
  7. 1 lemon, cut in wedge

Directions

  1. Preheat oven to 200°C (400°F).
  2. Place 4 sheets of aluminum foil, each about 35 cm (14 inches) long, on work surface.
  3. Place a fish fillet in the centre of each sheet.
  4. Stir together shallot, thyme and parsley in a bowl. Add salt and pepper to taste. Spread herb mixture evenly over fish fillets.
  5. Spread about 30 mL (2 tbsp.) yogurt over each Arctic char fillet.
  6. Fold aluminum foil to make four sealed packets.
  7. Bake in the oven for about 15 minutes, or until fish is cooked.
  8. Serve with lemon wedges, rice and zucchini.
