Hearty oriental soup

Ingredients

  1. 120 g (1/4 lb.) rice vermicelli
  2. 2 L (8 cups) beef broth or veal stock
  3. 15 mL (1 tbsp.) soy sauce
  4. 15 mL (1 tbsp.) your choice of Ponzu-type sauce
  5. 5 mL (1 tsp.) Thai red curry paste
  6. To taste, coarsely chopped fresh cilantro
  7. 1 piece (2.5 cm or 1 in.) fresh ginger, peeled and sliced
  8. 1/2 lime, squeezed
  9. 1 bag (750 g) Arctic Gardens Oriental Style Vegetables
  10. 450 g (1 lb.) beef fondue meat, sliced
  11. To taste, salt and freshly ground pepper
  12. 225 g (1/2 lb.) bean sprouts
  13. 10 fresh cilantro leaves

Directions

  1. Place rice vermicelli in a large bowl and cover with warm water to rehydrate. Let stand during soup preparation.
  2. In a large saucepan, bring broth to a boil. Flavour by adding soy sauce, Ponzu-type sauce, curry paste, cilantro, ginger slices, and lime juice.
  3. Add vegetable mix. Bring to a boil, add beef, and cook for 2 minutes. Adjust seasoning as required.
  4. Drain rice vermicelli and divide into four bowls. Pour soup over vermicelli.
  5. Garnish with bean sprouts and cilantro leaves. Serve.
