Ingredients

60 mL ¼ cup olive oil

1.5 kg (3 lb.) pork loin roast

3–4 cloves of garlic, minced

180 mL (¾ cup) apple cider

60 mL (¼ cup) soy sauce

500 mL (2 cups) pineapple, cut into pieces

125 mL (½ cup) brown sugar
Toppings

4–6 nori seaweed sheets, quartered

750 mL (3 cups) cooked sushi rice

1–2 avocados, cut into pieces

Directions

Preheat oven to 190 °C (375 °F).

Brush pork with half of the olive oil. Season with salt and pepper.

In an oven-safe pot, sear pork on all sides. Set aside on a plate.

In the same pot, add remaining oil and chopped garlic. Cook for 1 minute.

Add apple cider and soy sauce. Add pineapple. Bring to a boil. Put pork back into the pot. Sprinkle with brown sugar.

Bake for 1 hour, basting once or twice.

Remove from oven. Let stand for 5 minutes.

Slice very thinly. Return sliced meat to the pot with pineapple and sauce.

Serve with nori. Top with rice, Hawaiian pork, pineapple and avocado pieces, and cooking juices.
Chef’s Secret
- Pork loin can also be eaten rare. It’s a lean meat, which means that it should not be overcooked.
