Ham Tostada with Apple Coleslaw

Ingredients

  1. 1 avocado, cut into small cubes
  2. 30 mL (2 tbsp.) of chopped cilantro
  3. 30 mL (2 tbsp.) of mayonnaise
  4. 15 mL (1 tbsp.) of lime juice
  5. 250 mL (1 cup) of coleslaw
  6. 1/2 apple, thinly julienned
  7. 30 mL (2 tbsp.) chopped green onion
  8. 30 mL (2 tbsp.) of dressing
  9. To taste, salt and pepper
  10. 2 tostadas
  11. 250 mL (1 cup) of ham leftovers, pulled
  12. To taste, fresh cilantro
  13. To taste, spicy salsa

Directions

  1. In a small blender, add all mayonnaise ingredients and pulse until smooth and creamy. Season with salt and pepper to taste. Set aside.
  2. In a bowl, combine all ingredients for the apple coleslaw. Set aside.
  3. Place tostadas on a plate or serving board.
  4. Garnish with avocado mayonnaise, pulled ham and apple coleslaw.
  5. Serve with fresh cilantro and spicy salsa to taste.
