Haddock Fillets with Sautéed Vegetables

Ingredients

  1. 4 basil leaves Compliments, thinly sliced
  2. 1 tbsp (15 mL) Compliments balsamic vinegar
  3. ¼ red onion
  4. To taste, salt and pepper
  5. ½ red pepper
  6. ½ yellow pepper
  7. 1/2 orange pepper
  8. 1 pkg. (227 g) white mushrooms Compliments, quartered
  9. 1 tbsp (15 mL) olive oil Compliments
  10. 1 cup (250 mL) Arborio rice
  11. 4 battered Haddock fillets Compliments

Directions

  1. Prepare the haddock and rice according to package directions.

  2. Heat the oil in a large skillet set over medium-high heat. Sauté the mushrooms for about 5 minutes or until golden.

  3. Add peppers and onion; sauté for about 3 minutes or until heated through. Season to taste with salt and pepper; stir in the vinegar. Top vegetables with the haddock fillets. Serve with rice. Garnish with basil.
