Ingredients

5 mL (1 tsp.) canola oil

454 g (1 lb) lean ground pork or beef

350 g (1 bag) vegetables for fajita

300 g (1 box) taco kit

1 avocado, diced
-
1/2 lime, juiced

4–6 lettuce leaves, finely chopped

2–3 green onions, chopped

Directions

In a large skillet set over high heat, heat oil and cook ground pork for 5 minutes or until no longer pink, crumbling meat with a spoon.

Add fajita vegetables and continue cooking for 5 minutes or until hot.

Add taco kit spice mix and 150 mL (⅔ cup) of water. Cook for 3 to 4 minutes.

Drizzle avocado with lime juice and set aside.

Heat taco shells according to package directions.

Fill shells with meat and vegetable mixture, diced avocado, lettuce, green onions and taco kit sauce.
