Grilled Shrimp Cocktail Skewers

Ingredients

  1. ½ medium sweet onion, cut into 2.5 cm (1 in.) chunks
  2. 1 package (340 g) Compliments • Organic Naturalina™ grape tomatoes
  3. 12 medium raw shrimp, peeled and deveined
  4. to taste vegetable oil
  5. To taste, salt and pepper
  6. 125 ml (½ cup) store-bought cocktail sauce
  7. 3 heavy wood skewers soaked in water
  8. 500 to 750 ml (2 to 3 cups) shredded lettuce (optional)
  9. To taste, lemon wedges

Directions

  1. Thread ingredients onto skewers in following order: onion, grape tomato, shrimp. Repeat. Finish with a piece of onion and a tomato.
  2. Lightly brush skewers with oil on each side and season to taste with salt and pepper.
  3. Preheat grill to medium-high and cook skewers, turning and basting regularly with cocktail sauce, until shrimp is cooked through (about 5 to 6 minutes).
  4. Arrange on a platter of shredded lettuce with lemon slices and additional cocktail sauce if desired.
