- Preheat barbecue to high.
- Thread two scallops horizontally onto each metal skewer. Salt and pepper.
- Place a strip of aluminum foil along front of grill to prevent skewer tips from blackening.
- Place scallops on grill with skewer tips on aluminum foil.
- Brush skewers with sauce and grill until cooked through and slightly charred, 2 or 3 minutes per side.
- Using tongs, transfer skewers to a serving dish, drizzle with lime juice, and sprinkle with chives.
Chef’s secret
If you don’t have metal skewers, you can use wooden ones that have been soaked in water for 30 minutes.
