Grilled Salmon Tournedos with Blueberry Salsa

Ingredients

Blueberry salsa

  1. To taste, salt and pepper
  2. 45 mL (3 tablespoons) lime juice
  3. 45 mL (3 tablespoons) red onion, finely chopped 
  4. 250 mL (1 cup) blueberries 
  5. 1 orange , peeled and diced
  6. 10 mL (2 teaspoons) honey
  7. 1 jalapeño pepper , finely chopped
  8. 45 mL (3 tablespoons) fresh coriander, chopped

Tournedos

  1. To taste, pepper
  2. 4 salmon tournedos stuffed with spinach and cheese 
  3. Juice of 1 lime 

Directions

  1. Gently combine all the salsa ingredients and set aside until ready to serve.
  2. Preheat the barbecue medium-high. Place the salmon tournedos on the grill. Sprinkle with lime juice and season with pepper, to taste.
  3. Cook the salmon tournedos for 5 to 6 minutes per centimetre of thickness (10 to 12 minutes per inch).
  4. Place each salmon steak on a bed of rice and serve with salsa and steamed snow peas.
