Grilled potatoes with feta and arugula

Ingredients

3 medium red potatoes
750 mL (3 cups) fresh arugula
45 mL (3 tbsp.) garlic and bacon ranch dressing
15 mL (1 tbsp.) crumbled feta
15 mL (1 tbsp.) finely chopped fresh chives
To taste, crumbled bacon

Directions

Prick the potatoes a few times with the tip of a knife and microwave on HIGH for 2 minutes or until slightly softened. Slice into 2-cm (½-in.) rounds and grill 5 minutes per side or until golden and crisp.
Toss together the arugula, potatoes, and dressing in a shallow serving bowl. Sprinkle with feta, chives, and bacon.
