Grilled eggplant

Ingredients

  1. 4 slices of eggplant about 2 cm (1/2 in.) thick
  2. 45 mL (3 tbsp.) Sensations by Compliments Kansas City Style Smokey Barbecue Sauce
  3. 10 mL (2 tsp.) Compliments Steak Spice Seasoning
  4. 1 package (227 g) sliced mushrooms
  5. 60 mL (¼ cup) of crumbled blue cheese
  6. 60 mL (¼ cup) minced white onion

Directions

  1. Preheat the barbecue to medium-high.
  2. Brush both sides of the eggplant with barbecue sauce. Sprinkle the steak spices on one side of each eggplant slice. Set aside. Place mushrooms in a perforated aluminum barbecue pan.
  3. Place the eggplant and the pan of mushrooms on the barbecue grill. Cook the eggplant 2 minutes on each side and the mushrooms until golden brown.
  4. Garnish the eggplant slices with mushrooms, blue cheese, and onion.

TIP:

  • For a main course, serve with lentil and rice pilaf or, for a lighter meal, serve with a slice of whole grain bread.

VARIATION:

  • Replace the blue cheese with Swiss cheese and follow this sequence: eggplant, slice of Swiss cheese, mushrooms, onions.
