Grilled Chicken and Tomato Salad with Parmesan Vinaigrette

Ingredients

  1. 30 mL (2 tbsp.) grated Parmesan
  2. 175 mL (¾ cup) store-bought Italian vinaigrette
  3. 2 L (8 cups) salad greens of choice, torn into bite-size pieces
  4. 500 mL (2 cups) commercial barbecue chicken, bones removed and diced
  5. 12 cherry tomatoes, halved

Directions

  1. Whisk Parmesan into vinaigrette.
  2. In a large bowl, toss greens with three-quarters of vinaigrette. Set aside remaining vinaigrette.
  3. Divide greens onto four plates. Top with chicken and tomatoes, and drizzle with remaining vinaigrette.
