Grilled Bay Leaf and Lemon Chicken

Ingredients

Chicken

  1. 4 boneless chicken breasts
  2. 2 lemons
  3. 16 fresh bay leaves
  4. 2 large red onions
  5. 4 wooden skewers soaked in water

Yogurt Sauce

  1. 45 mL (3 tbsp.) olive oil
  2. 2 garlic cloves
  3. 250 mL (1 cup) plain Greek yogurt
  4. 30 mL (2 tbsp.) lemon zest
  5. 30 mL (2 tbsp.) lemon juice
  6. 45 mL (3 tbsp.) Cajun spices (or grilling spices)
  7. To taste, salt and pepper

Directions

  1. To make yogurt sauce, combine all ingredients in a bowl.
  2. Pour half of sauce into an airtight container and add chicken pieces. Marinate for 2 to 4 hours in the fridge.
  3. Reserve remaining sauce in a separate container in the fridge.
  4. Preheat barbecue to medium-high.
  5. Assemble brochettes by alternating chicken pieces, onion, lemon rounds and bay leaves.
  6. Grill brochettes on barbecue for 15 to 20 minutes, turning occasionally, until chicken is cooked.
  7. Serve with grilled eggplant rounds and vegetable rice.
  8. Serve with reserved yogurt sauce.
