Green bean & cherry tomato salad

Ingredients

  1. 375 g (¾ lb.) green beans, trimmed
  2. 250 mL (1 cup) cherry tomatoes, halved
  3. 1 small shallot, finely chopped
  4. 60 mL (¼ cup) fresh basil, coarsely chopped
  5. 45 mL (3 tbsp.) olive oil
  6. 15 mL (1 tbsp.) red wine vinegar
  7. To taste, salt and pepper

Directions

  1. Cook the beans in a large saucepan of boiling water until cooked but still firm, about 2 minutes. 
  2. Drain and rinse with cold water. 
  3. Pat dry and transfer to a large serving dish with the tomatoes, shallot, and basil. 
  4. Mix together oil and vinegar. 
  5. Pour the vinaigrette over the salad; season with salt and pepper. Toss and serve.
