Ingredients

450 g (1 lb.) ground chicken

30 mL (2 tbsp.) panko or regular bread crumbs

4 green onions, thinly sliced

175 mL (¾ cup) crumbled feta

10 mL (2 tsp.) finely grated lemon zest

15 mL (1 tbsp.) dried dill

To taste, salt

4 hamburger buns

To taste, mayonnaise

As toppings, tomato and cucumber slices

15 ml (1 tbsp.) olive oil

Directions
- Mix together chicken, panko bread crumbs, green onions, feta, lemon zest, dill, and salt in a bowl.
- Shape into 4 patties. Refrigerate for at least 30 minutes.
- Heat a little oil over medium-high heat in a non-stick skillet and fry patties 4 or 5 minutes. Turn and fry another 2 or 3 minutes more before reducing the heat to continue cooking until meat is well done and a meat thermometer inserted into the centre of the patty reads 74ºC (165ºF). To cook on the barbecue, place patties on a non-stick griddle placed on the grill.
- Serve on toasted hamburger buns spread with mayonnaise and topped with slices of tomato and cucumber.
