Gourmet dark chocolate cake ring

Ingredients

  1. 500 mL (2 cups)all purpose flour
  2. 7 mL (1½ tsp.) baking powder
  3. 7 mL (1½ tsp.) baking soda
  4. 1 mL (¼ tsp.) salt
  5. 100 g (3.5 oz.) 70% dark chocolate
  6. 125 mL (½ cup) unsalted butter
  7. 500 mL (2 cups) sugar
  8. 2 eggs
  9. 250 mL (1 cup) vanilla Greek yogurt
  10. 10 mL (2 tsp.) vanilla extract

Icing

  1. 100 g (3.5 oz.) 70% dark chocolate
  2. 30 mL (2 tbsp.) unsalted butter
  3. 45 mL (3 tbsp.) icing sugar
  4. 30 mL (2 tbsp.) milk

Topping

  1. 1 container raspberries
  2. 1 container blackberries
  3. To taste, icing sugar (optional)

Directions

  1. Preheat oven to 180°C (350°F).
  2. Combine flour, baking powder, baking soda, and salt in a bowl.
  3. Melt chocolate in the top of a double boiler. Set aside.
  4. In another bowl, beat butter, sugar and eggs. Add yogurt and vanilla and mix well to combine. 
  5. Add chocolate and mix well. 
  6. Incorporate dry ingredients and mix to combine. 
  7. Pour batter into a bundt pan and bake for 35 minutes. Let stand for 15 to 20 minutes before turning onto a serving dish, then let cool completely.

Icing

  1. Combine and melt all ingredients in the top of a double boiler, until smooth; then pour over cake. 
  2. Garnish centre of the cake with raspberries and blackberries. Sprinkle with icing sugar if you like and serve.
