Gouda and Mushroom Soup

Ingredients

  1. 250 mL (1 cup) cooked chicken
  2. 10 mL (2 tsp.) dried thyme
  3. 6 slices toast
  4. 500 mL (2 cups) Gouda cheese, grated
  5. 750 mL (3 cups) mushrooms (shiitake, oyster, button)
  6. 1.5 L (6 cups) chicken broth
  7. 250 mL (1 cup) carrots
  8. 250 mL (1 cup) parsnips
  9. 375 mL (1½ cups) celery
  10. 2 onions
  11. 15 mL (1 tbsp.) Compliments olive oil

Directions

  1. Heat oil in a large saucepan and brown onion for two minutes.
  2. Add celery, parsnips and carrots and continue cooking for 3 to 4 minutes.
  3. Pour in chicken broth. Add mushrooms, chicken and thyme. Cover and let simmer for 20 minutes.
  4. Ladle soup into four ovenproof bowls.
  5. Top each bowl with a toast slice and 75 mL (⅓ cup) of Canadian Gouda cheese.
  6. Preheat broiler and cook for about 4 minutes or until cheese is melted and slightly browned. Serve immediately.
