Goat Cheese-Stuffed Chicken Over Tomatoes

Ingredients

  1. 1 can (796 ml/28 oz.) diced tomatoes
  2. To taste, salt and pepper
  3. A few basil leaves
  4. 125 g Paillot de Chèvre goat cheese, sliced
  5. 4 boneless , skinless chicken breast halves
  6. 15 ml (1 tbsp.) olive oil

Directions

  1. Preheat oven to 190°C (375°F).
  2. Slice chicken breasts open butterfly-style. Place cheese slices in centre of chicken and insert basil leaves in between.
  3. Refold breasts and secure with a toothpick. Season thoroughly. Pour tomatoes into a baking dish. Place chicken on top. Drizzle with olive oil.
  4. Bake for 30 to 40 minutes until chicken is golden. Serve with pasta and a green vegetable.
