Goat Cheese and Apple Puff Pastry

Ingredients

  1. To taste, salt and pepper
  2. To taste, maple syrup or honey
  3. 30 mL (2 tb sp.) fresh thyme
  4. 30 mL (2 tb sp.) olive oil
  5. 2 unpeeled apples, cored and cut into thin strips
  6. 300 g (10 oz) unripened goat cheese, cut into strips
  7. 2 sheets frozen puff pastry

Directions

  1. Preheat oven to 200°C (400°F).
  2. Roll up pastry sheets and cut each into 8 squares to obtain 16 servings. Place pastry squares on a baking sheet covered with parchment paper and prick with a fork.
  3. Place some cheese in center of each square, leaving a little border all around. Place several apple strips on each square, covering cheese completely.
  4. Brush apple with a little oil and sprinkle with thyme. Season to taste. Bake squares for 20 to 25 minutes until pastry is cooked and edges are golden.
  5. Garnish with a drizzle of maple syrup or honey and serve immediately.
