Geneviève O'Gleman's Carrot cake

Ingredients

  1. 750 ml (3 cups) finely grated carrot
  2. 500 ml (2 cups) whole-wheat flour
  3. 10 ml (2 tsp.) baking powder
  4. 10 ml (2 tsp.) ground cinnamon
  5. 5 ml (1 tsp.) ground ginger
  6. 2.5 ml (1/2 tsp.) ground nutmeg
  7. 1 ml (1/4 tsp.) salt
  8. 2 eggs
  9. 180 ml (3/4 cup) brown sugar
  10. 125 ml (1/2 cup) vegetable oil
  11. 60 ml (1/4 cup) orange juice (or the juice of a large orange)
  12. 15 ml (1 tbsp.) vanilla extract

FROSTING

  1. 250 ml (1 cup) quark fresh cheese
  2. 125 ml (1/2 cup) cream cheese
  3. 125 ml (1/2 cup) icing sugar
  4. 7.5 ml (/12 tbsp.) vanilla extract
  5. 60 ml (1/4 cup) walnuts

Directions

  1. Preheat oven to 180°C (350°F). Place the grill in the centre position. Oil a round cake pan, 23 cm (9 in.) in diameter. Cut a circle piece of parchment paper of the same size and put it at the bottom of the pan.
  2. Using a cheese grater, finely grate the carrots. Set aside.
  3. In a large bowl, mix the flour, cinnamon, ginger, baking powder, nutmeg, and salt.
  4. In another large bowl, using a whisk, beat the eggs, brown sugar, oil, orange juice and vanilla.
  5. Add the dry ingredients to the wet ingredients. Mix. Add the grated carrots and mix well.
  6. Transfer the mixture to the pan and cook 45 minutes, or until a toothpick inserted in the centre comes out clean.
  7. While the cake is cooking, prepare the frosting. In a medium bowl, using a hand mixer, combine the quark cheese, cream cheese, icing sugar, and vanilla until smooth.
  8. Let the cake cool before transferring to a serving dish.
  9. Spread frosting on the cake, garnish with walnuts, and serve.

Keeps in the fridge for 4 days or can be frozen for 2 months, without the frosting.
