Ingredients

2 packages (350 g each) cheese tortellini

30 mL (2 tbsp.) butter

6 cloves garlic, minced

1 lemon, zested and juiced

125 mL (1/2 cup) Parmesan cheese

2 bunches fresh basil, chopped
-
1 bunch fresh chives, chopped
-
125 mL (1/2 cup) freshly chopped parsley

2.5 mL (1/2 tsp.) salt

1 package (342 g) family-size spring mix

Directions

In a large pot of salted water, cook tortellini according to package directions. Reserve 1 cup (250 mL) of cooking water. Drain and set aside.

In a large skillet, heat butter over medium-low heat and cook garlic for 2 to 3 minutes. Add lemon zest, lemon juice and Parmesan. Mix well.

Add cooking water, all herbs and salt. Mix.

Add tortellini, mix and cook to heat pasta.

Serve with a green salad.
