Ingredients

125 mL (½ cup) olive oil

2 onions, diced

2 stalks celery, diced

1 large can (796 mL/28 oz.) diced tomatoes

125 mL (½ cup) water

12 baby potatoes, halved

10 very big green olives, pitted and quartered

45 mL (3 tbsp.) capers
-
45 mL (3 tbsp.) toasted pine nuts

125 mL (½ cup) golden raisins
-
30 mL (2 tbsp.) hot peppers in oil, chopped

To taste, salt

900 g (2 lb.) fresh cod, cut in large pieces

Directions

Heat oil in a large skillet and sauté onions for about 2 minutes.

Add the celery, tomatoes, and water. Bring to a boil. Add the potatoes, olives, capers, pine nuts, raisins, and hot peppers. Season to taste.

Cover and simmer over low heat for 15 minutes, stirring from time to time.

Add the pieces of cod and continue cooking for 10 minutes. If sauce becomes too thick, add a little water while cooking.

Serve very hot.
