Ingredients
Oysters

24 oysters, brushed, cleaned, and opened

5 mL (1 tsp.) fresh ginger, grated
Tangy salsa

3 Compliments Mini Seedless Cucumbers

½ bunch (10 g) Compliments Chives, chopped

3 limes, zested, pith and membranes between segments removed

30 mL (2 tbsp.) honey
Sweet salsa

75 g (2½ oz.) Compliments Santalina Very Sweet Grape Tomatoes, finely diced

60 g (2 oz.) Sardo roasted red pepper strips in oil, chopped

3 strawberries, finely diced

10 mL (2 tsp.) lemon zest
-
5 mL (1 tsp.) fresh lemon juice

To taste, Tabasco sauce,

Directions
- Mix together all the ingredients and use them to top freshly opened oysters that have been detached from the shell.
