Freezer oatmeal: Field berries

Ingredients

  1. 1 L (4 cups) milk
  2. 500 mL (2 cups) rolled oats
  3. 45 mL (3 tbsp.) packed brown sugar
  4. 60 mL (¼ cup) chopped walnuts
  5. 60 mL (¼ cup) chopped pecans
  6. 1 L (4 cups) berries

Directions

  1. In a medium saucepan, bring milk to a boil over medium-high heat.
  2. Add oats and brown sugar, stirring continuously until mixture comes to a boil.
  3. Reduce heat. Let simmer 2 minutes, stirring occasionally.
  4. Set aside off heat until liquid ompletely absorbs, approximately 5 minutes. 
  5. Add walnuts and pecans and mix to combine.
  6. Coat muffin pan with non-stick cooking spray. Divide mixture evenly among muffin cups.
  7. Top each serving with berries. 
  8. Cover and freeze. Once frozen, transfer individual servings to sealed containers.
  9. When ready to serve, reheat in microwave for about 1½ minutes at full power. For a smoother texture, add a splash of milk.
